Fourth Of July Berry Tart

The Perfect Fourth of July Dessert! 🇺🇸🫐🍓*Keto & Gluten Free*

Ingredients:

2 1/4 cups Almond flour

1/4 cup Powdered Monkfruit Sweetener— I used Lakanto

5 tbsp Melted butter

1/4 tsp Sea salt

5 scoops Unflavored Collagen Peptides

6 oz Mascarpone

1/3 cup Kite Hill Cream Cheese

1 tsp Pure vanilla extract

2 tbsp Powdered Monkfruit Sweetener

Organic Sliced Strawberries, Blueberries, Raspberries & Blackberries

Directions: Preheat oven to 350 F. Spray a pie plate with Olive Oil Spray. In a bowl combine the almond flour, butter, 2 1/2 scoops collagen, salt and sweetener. Mix well. Add the mixture to the pie plate and press down into the bottom of the plate, making holes using a fork on the bottom of the dough. Bake for 10 minutes, until golden, then remove from the oven and cool completely.

For the Filling: Beat the mascarpone and powdered sweetener on low for 2 minutes. While beating on low speed, add the Kite Hill Cream Cheese and 2 1/2 scoops Collagen. Increase to medium speed and beat for 30-60 seconds, until thick. Try not to overbeat or it will separate. Beat in the vanilla extract. Top the tart crust with the filling and then arrange the berries on top, slicing the strawberries if you decide to use them! Enjoy!
