Chicken Meatball Recipe (Gluten-free)

Chicken Meatballs so good you can trick an Italian!👩🏼‍🍳⠀

Ingredients (makes 9 meatballs):

1 lb Lean Ground Chicken⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 Cup Chopped Parsley⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 Tbsp Italian flavored Nutcrumbs⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 Minced garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 Tbsp Grated Parmesan Cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀
Monte Bene Tomato Basil Sauce (Rao's or Michael's of Brooklyn are other clean brands)⠀⠀

Directions:⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper or coat the pan with avocado oil cooking spray. Place the ground chicken, nutcrumbs, parmesan cheese, garlic, salt, and parsley in a bowl. Mix until thoroughly combined. Roll 1 inch sized meatballs, (should make about 9) and place the meatballs in a single layer on the baking pan. Bake for 20 minutes, or until meatballs are browned and cooked through. If you are eating right away, add full jar of Tomato Sauce to stovetop and add meatballs to sauce. Heat sauce for a few minutes until hot and then serve meatballs and sauce over your favorite Chickpea, Brown Rice or Bean based Pasta. I love adding mine to Hearts of Palm Linguine!⠀⠀⠀⠀⠀⠀⠀⠀⠀
If you have leftovers, or are cooking for the week, let meatballs cool and then add to tupperware. Heat up with sauce the night you will be consuming.
