Oatmeal Raisin Protein Power Balls

These Oatmeal Raisin Protein Balls are the ideal snack for when you want something sweet but healthy! Full of protein, fiber and healthy fats to keep you satiated and energized. You could even have them for breakfast 😉My husband loves Oatmeal Raisin Cookies but they're full of sugar so I recreated them in a bite size portion, with all clean ingredients. Perfect for taking on the go while traveling, on the beach or golfing!

Ingredients:

  • 1 cup Organic Oats (Bob's Red Mill Organic, Gluten-Free Old Fashioned Oats are the cleanest with no harmful pesticides)

  • 1 cup Medjool Dates

  • 3 Scoops Unflavored Collagen Powder (I used Vital Proteins)

  • 2 tbsp Ground Flax & Chia Seeds (I used a blend, can do 1 tbsp of each)

  • 2 tbsp Creamy Almond Butter (only ingredient should be almonds, I used Trader Joe's Organic Creamy Almond Butter)

  • 3/4 Cup Organic Raisins (only ingredient should be raisins)

  • 1 tsp Vanilla Extract

  • 1/3 cup Filtered Water

Directions:

Soften dates in hot water for 5 minutes. Remove the pit if there is still one intact. Blend the Oats, Dates and Collagen Powder in a food processor. Gradually add the water until they are a sticky consistency. Add the mixture to a mixing bowl and add the Flax/Chia seeds, Almond Butter & Vanilla Extract. Mix well until all have been incorporated. Add the 3/4 cup Raisins and mix well. Form the mixture into 1 inch balls and place on parchment paper on a plate or baking sheet. Put in the refrigerator to solidify a bit. Store the balls in a covered container in the fridge for up to a week or in the freezer for longer! Enjoy 🍪
